Making Sauvignon Blanc in Hawkes Bay is all about choosing the right time to pick. Of course, there’s a lot of work done before then, but it’s capturing the grapes when they are at their most intense that really defines what Sauvignon Blanc will taste like.

Depending on the heat of the season, we can see melon, passionfruit and hints of gooseberry and lime flavours in grapes that will be there in the wine. To create a palate that is mouth-filling and juicy with vibrant fruit and fantastic mid palate richness, concentration and weight we need to make sure there’s enough natural fruit ripeness to work within the winery. That combines with slow ferment and cool temperatures all help create the kind of wine we’re after.

 A beautifully intense and lively wine, with melon, passionfruit and hints of gooseberry and lime.  The palate is mouth-filling and juicy with vibrant fruit and fantastic mid palate richness, concentration and weight. The finish is rich and racy with excellent length and crispness.

Bright, light straw-yellow colour with slight green hues. The bouquet is soft and rounded with gently concentrated aromas of waxy herbs, lanolin,, white stonefruits and nuances of cut grass. Dry to taste and medium-bodied, the flavours of cut grass, gooseberries and herbs are intermixed with gentle lanolin and waxy notes. The mouthfeel is crisp with refreshing lacy acidity. and dry-textured with emerging phenolics. The acidity lends energy and tension, carrying the wine to a light, dty finish. This is an elegant, tight, mouthwatering and dry Sauvignon Blanc with herb, grass and lanolin flavours. Match with seafood and Mediterranean fare over the next 18 months to 2 years. 100% Sauvignon Blanc cool-fermented in stainless-steel to 13.94% alc. and 2 g/L RS. 16.0/20 Oct 2015
